A No-Bake Adorable Easter Treat: Chocolate Birds' Nests


Impress your guests on easter with these treats!
Several of my recipes have been highlighted on food sites like Foodgawker, Tastespotting and Serious Eats, which makes me very happy. Before I even started a recipe blog for my family, Foodgawker was a site I would frequent when looking for fabulous recipes. In fact it's still one of my favorite sites to go to to find great recipes. It has also introduced me to some amazing food blogs. Of course the well established blogs are wonderful but I especially love to read the smaller bogs, the ones that share real life day to day cooking, kinda like mine. One that caught my attention was Chef in Training, it's a great blog about woman refining her cooking skills for her family. The one recipe that I adapted from her blog is a dessert called "No Bake Chocolate Egg Nest Cookies." It's a no-bake recipe so I just had to make it. I'm not a big baker so any dessert that's simple and delicious is on my radar screen. I actually made it the day I made the "Saltine Toffee" recipe. I whipped up both recipes in no time. Chef in Training made her nests using chow mien noodles and butterscotch chips and I made mine with pretzels and coconut. They taste delicious but the best part was really how stink'n cute they look. They are a little messy to eat since they melt in your hands quickly. Not something you want to give young kids wearing white or in a room with white furniture. I used the malted colored eggs that I bought from Dash's but you could add bird peeps, M-n-M's or jelly beans. This recipe is one that will impress based on the presentation alone. Tyler helped me make this recipe so having your little ones help out is fun, especially when they get to add the candy props in the nests. Salute to the most stink'n cute no-bake easter treats!

No-Bake Chocolate Nests (Click to print recipe)

Serves 12

Ingredients:
  • 16 ounces of semi sweet chocolate chips
  • 4 cups pretzel sticks crushed
  • 1/2 cup of shredded coconut
  • candy eggs, peeps, m-n-m's to place in nests
In a microwave safe bowl melt chocolate chips about 30 seconds or so. Add coconut and crushed pretzel sticks. Stir until chocolate has coated the pretzels well. Using a muffin pan, spray with a non stick spray. Drop spoonfuls of the chocolate pretzels into muffin tin and mold until formed into nests. Let cool for at least 2 hours in freezer or refrigerator. Add eggs.

A Simple Scrumptious Easter Dessert: Saltine Toffee Bars

The dessert I made is "Saltine Toffee Bars." AKA: "Toffee Crack." Yes, it's referred to as "Toffee Crack" because you can't stop at one piece! It's all over Pinterest and everyone who pins it gets thousands of likes. It was particularly pinned all over Pinterest around Christmas time. It's a dessert I've always wanted to try. In fact it's one of those pins that I have on my Pinterest board that sits there looking pretty but I've never made. Yes, you know what I'm talking about. Crazy pinner who pins and says "oh, that looks super yummy, I have to make it" and then never does. I pinned "cooler corn on the cob" like 3 years ago and thought it was the best idea ever and of course never made it. It's basically putting 50 ears of corn in a cooler, dumping boiling water in it and within 2 hours your corn on the cob is perfectly cooked. Sounds great right? But when the heck would I ever need or want to cook 50 ears of corn at once???? NEVER! Another time I pinned a post on hemming jeans. Again it was a brilliant idea seemed super simple, but when in my life time would I ever hem my own jeans or EVER want to???? Yep I'm going to go to Tony Walker, buy a pair of $200.00 Hudson jeans and then hem them myself, ya right! If I ever attempt to hem my own jeans my friends, slap me! Okay you get my point about pinning but never actually doing anything with it.

We'll, I am happy and proud to report that I actually made something from one of my pin boards. It's this so called saltine toffee crack. I was a bit skeptical about making this saltine toffee dessert because I was like chocolate over crackers, yum-not. I hesitantly took a bite after we made it and was like, yum-yes!! There is something about the sweetness, butteriness and saltiness that works so well together and made them so delicious! I'm not sure why I never made these before because they are really super simple to make and super scrumptious to eat. I used club crackers rather than saltine to add more of a butter taste. I made these as an Easter treat for the boys so I added Easter colored sprinkles on top to make it look festive. You can add anything to the top like crushed nuts, shaved coconut, or any type of sprinkle.Tyler helped me make it and we had it done within 15 minutes. The longest step was letting it cool in the refrigerator. Yep, the claims on Pinterest were valid, it's crack alright! Warning: This dessert is highly addictive. You will not stop at one piece. I'm craving a piece right now, that's how good it is, seriously! So if you are looking for an easy treat to make for Easter or whenever this is sure to be a hit with the children as well the adults. Salute to Saltine Toffee, AKA toffee crack!

Preperation and cook time: 15 minutes

Serves 10-12

Ingredients:
  • 1 box of club crackers or saltine (you'll use about 2 sleeves of crackers)
  • 2 sticks of butter
  • 1 cup brown sugar
  • 1 1/2 cups chocolate chips
  • 1/3 cup sprinkles or crushed nuts
Heat oven to 400 degrees. Line a cookie sheet with parchment paper or foil and lightly spray with a baking spray. Place the saltines or club crackers in a single layer on the cookie sheet. make sure to cover the hole sheet and place the crackers close together to there are no gaps. In a saucepan melt butter and brown sugar over medium hear and continuously stir until they are blended together and turn into a caramel color, about 5 minutes. Remove pan from heat and then then pour the butter mixture over the top of crackers. Make sure to cover all of the crackers and spread with a spoon to make sure it is evenly coated. Bake in the oven for a few minutes or until you see it lightly bubbling. Take out of oven and evenly sprinkle chocolate chips over top. It will begin to melt. Spread the chocolate chips evenly over the top. Place sprinkles or nuts on top and place in the refrigerator or freezer until completely cooled. About 30 minutes. Remove from pan and break into squares. Store in a container and keep refrigerated.

Tyler: "I helped mom make these, aren't they the best?"

Zachary: "Why didn't you ask me to help you make these? Tyler probably got to eat them while he was helping you." "Can I have these in my lunch tomorrow?"

Andrea: Saltine Toffee on crack for sure! The sweet, salty and butteriness make it so addicting. Such a quick easy dessert to make. Great to bring over to someones house. I will experiment and make with other toppings.

A Tuscan Vegetable Bake for my Diet


This has been a rabbit food diet for me this week. Nothing but lettuce, vegetables and some protein. Weeks ago I vowed to loose at least 5 pounds before our trip to the Dominican Republic but then Local Restaurant had to happen right before our trip and threw things off for me. Thanks a lot Restaurant Week! I shouldn't complain because the week was nothing but indulging on fabulous foods from Buffalo's amazing restaurants. If you participated you know what I mean. Luckily the weather has been nice so I've been able to jog outside and offset a few extra a ton of extra calories that I consumed last week. I really don't mind going on the rabbit food diet, minus the hay, because I love eating vegetables and salads. I always say I could eat a giant plate of mixed vegetables for dinner every night and be very satisfied. Dave and the boys would never go for that so it doesn't happen too often. When I want to loose a few pounds my cooking changes in the house and Dave and the boys usually grump about it. So I had to buy a giant sized bag of frozen chicken strips from Wegmans to keep them happy. Tonight I made one of my favorites, a Tuscan Vegetable Bake. It's loaded with hearty vegetables so it's very satisfying all by itself. That's all I ate tonight and I was very full. It's also super healthy and low in calories. Other than the mozzarella and parmesan cheese, it simply just veggies and herbs. For those who want something more substantial it's delicious over pasta, sausage or chicken breasts. I made chicken sausage on the side for the boys (see pic below) which made them happy. The other thing about this dish is that you can alter the veggies to your liking. I typically add eggplant, mushrooms and onions but I didn't this time. The tuscan bake I made tonight consisted of yellow squash, broccoli, baby spinach, artichoke hearts, canned tomatoes, and lots of garlic and fresh basil, oh and mozzarella and parm cheese. I didn't add any olive oil because the juice from the canned tomatoes seasons and helps soften the vegetables while they cook. The artichokes give this dish a nice punch of flavor so I add two cans. While this dish wasn't and typically isn't a huge hit with the boys, it was for me and that's all that matters because I need to fit into my bathing suit! Salute to my lettuce and veggie rabbit diet, minus the hay!

Preparation and cook time: 50 minutes

Serves 6-8

Ingredients:

  • 3 cups steamed chopped broccoli, steam in microwave for 5 minutes
  • 3 medium sized yellow squash, thickly sliced and quartered
  • 2 cans 14 oz quartered artichoke hearts
  • 2 cups baby spinach
  • 1 28 oz can diced tomatoes with juice
  • 2 t minced garlic
  • 3 tb chopped fresh basil
  • 1/2 cup grated parmesan cheese
  • 2 cups shredded mozzarella cheese
  • 1 t salt
  • 1/4 t black pepper
Heat oven to 375 degrees. In a roasting pan, add yellow squash and steamed broccoli and stir. Add spinach, artichokes and diced tomatoes. Add parm cheese, 1 cup of mozzarella cheese, salt and pepper, garlic and basil and mix well. Cover roasting pan and bake in oven for 40 minutes or until veggies are tender. Add the last cup of mozzarella cheese over top and bake uncovered for 5 minutes until melted. Serve with parm cheese on top.

Food Impressions:

Nate: "Are there onions in this? You know I don't like artichokes. Can I have more of this sausage? Can I have bread with butter, 2 slices?" 

Tyler: "I'm still not feeling well from last night, do I have to eat the rest of this?"

Zachary: "This is super yummy mom." (He didn't finish)

Andrea: Okay, like I said, not a huge hit with the boys but it was for me and that's all that matters because I need to loose 5 pounds!!!!!
I've ben buying these lately and they are actually pretty good. They are all natural and fully cooked so if you want something quick they are a great alternative fresh sausage  They also have a variety of flavors like andouille sausage.

Happy 13th Wedding Anniversary!


I remember the day I met Dave very well. It was Friday April 10th, 1998 and it was Good Friday to be exact. I went to happy hour at 67 West on Chippewa with Christine and some of my other friends. We were standing near the front of the bar and I noticed Dave walk in with his friend Ed. I immediately said to my friends "oh my gosh, look at that guy over there, he is so hot!" I then proceeded to say if you asked me to describe the perfect guy for me I would say look up the word "perfect man" in the dictionary and his picture would be right beside it! My friends laughed but I was serious. I was like I could marry this guy and I never even met him before. I remember making eye contact with him in hopes that he would eventually approach me. I couldn't help but keep drooling, I mean staring at him. He was dressed very preppy, he had on khakis, a checkered button down, a Ralph Lauren jacket and loafers with no socks. The no socks thing really did it for me. He looked so confident and self assured and even looked like someone who was really important in this world.

After about 45 minutes of making serious eye contact with each other, I was saying to myself come on, come over and talk to me already. He saw my girlfriends and I were being approached by, may I say, other suitors. I could tell he wanted to step in but didn't. I was hoping he didn't seriously think I was interested in these random guys. So I decided to break our eye contact competition and said to him "Well are you going to save me from  these guys?" Trust me, that comment was very uncharacteristic of me to even say, I think my voice cracked a few times. Dave replied "Really, well Hellllo then!" and he put his arm around me. It worked and the guys got the hint and walked away. From there, Dave and I talked the whole night, non-stop. Our friends were super annoyed. It was after midnight and they wanted to go home but we kept saying just a few minutes longer. Christine was a champ but I think she knew I really didn't want to stop talking to him so she stayed for as long as I wanted. To spare our friends we decided to say good bye. He asked for my phone number and I happily gave it to him, written very clearly on a cocktail napkin. I said "put it in your pocket right now and don't loose it." He promised he wouldn't but as I left I was like he's a guy, he's had a few drinks and it's after midnight…there is a good chance he may loose it. I hoped and prayed he wouldn't.

Late Easter night, when I got home from my Aunt's house, I saw the light blinking on my answering machine. I listened to my messages and there was a message from Dave! I was jumping up and down doing the jiggy dance. I immediately called Christine and said "Dave called!!!" She said "That's great but why are you calling me? Call him back!" I was like "oh ya, I should, bye." I called him back and he asked me to go out the next day. We went to the Hard Rock Cafe for dinner and walked around by Niagara Falls. I still make fun of him for suggesting the Hard Rock Cafe. I don't think he and I have ever been there since! From that date forward the rest was history and we were a couple. I knew early on that this was the man that I wanted to marry, the man I wanted to have children with, the man I wanted to spend the rest of my life with.

Luckily he felt the same way I did. On Christmas Eve of 1999, Dave proposed to me. We exchanged Christmas presents at his apartment before heading to my mom's house. The first gift he gave me was an omelet pan. I loved it, seriously! I made the best omelets and he wanted to get me the best omelet pan out there. Remember, I love to cook so any kitchen accessory was an amazing gift to me. Then he gave me one more gift. The box looked like a ring box but honestly I wasn't expecting an engagement ring. He got down on one knee, and I was like oh my gosh, I opened the box and he said "Will you marry me?" I was shocked and really had no idea he was going to propose. We talked about getting married but never once looked at rings. The ring by the way is one of the most beautiful rings I could have ever asked for. A solitaire cut; it was a classic Tiffany style ring. Stunning. He made me the happiest girl in the entire world. Dave was mine forever!

On April 7, 2001 we were married at St. Louis Church and our reception was at The Buffalo Club. It was the most beautiful ceremony and reception. We celebrated with all of our loved ones and it was a day that we will never forget. My brother wrote and sang a song at our wedding titled 67 West! It also helps we have it all documented on the finest VHS video tape. We couldn't stop talking about our wedding reception on our honeymoon. We went to Bora Bora for two weeks and it was magical in itself.

13 years ago today, I married Dave, my eternal love. They have been the absolute best years of my life. Every year that we celebrate our wedding anniversary I say our life together can't get any better, but yet it does. To this day, I still feel the butterflies in my stomach like I did on the first day we met at 67 West. That butterfly feeling has never gone away. Dave I love you so much, I love our boys, our life, our hopes, our dreams and our future. You are my eternal love, as engraved on the inside of your original wedding ring. Salute to you, to us, to our family, and to many many many more years! I love you infinity circles! Happy Anniversary!

Local Restaurant Week - Manzella's Restaurant


Local Restaurant Dining Adventure #3: Manzella's Restaurant

Tonight Dave and the boys and I went to dinner at Manzella's Restaurant in Kenmore. As I mentioned in a previous post, one of the things I love about Local Restaurant Week is that I have an opportunity to go to a restaurant that I have never been to before. Manzella's is one of those restaurants and it was on my list of places to try. Manzella's is literally a 1 minute drive from our house and I pass by it everyday on my way to and from work. We have lived in our house for 8 years and it still amazes me that we've never eaten there before. Marotto's Restauant is next door and that's another one we've never been to. Both restaurants always seem packed. I guess Dave and I are creatures of habit because anytime we go out to dinner, and trust me we eat out a lot, we tend to go to our favorites like Left Bank, Hutches, Tempo, Mother's, Shango, Serling Tavern….the list goes on. So when we decide on a place to dine out we typically choose the safe route and pick a spot we know we will love. Restaurant week is the perfect time to try a new place without breaking the bank. Manzella's menu impressed me in particular because they had such an extensive menu even considering it was LRW. Plus they had live music playing in their bar area which added a cool rat pack vibe. They also had glasses of wine for $2.14!!!! Crazy dirt cheap, I know! For $20.14, their menu included a cup of soup or salad, a choice of 10 dinner entrees and a cannoli for dessert. And trust me they did not skimp on portion sizes. Our dinner reservations were for 7 pm and when we walked in the restaurant was packed, you could barely move. The staff were very warm and welcoming and you felt like you were walking into a family owned restaurant. I was like wow, if it's always this busy because the food is that good I'm going to kick myself for not coming sooner. Our waitress, Marguerite, was super. She immediately brought over warm bread with a delicious olive tapenade. We decided to get the stuffed banana peppers as an appetizer. They were stuffed with ricotta and mozzarella cheese over baguette bread and a marinara sauce. With our entrees we had a choice of salad or soup, Dave chose the salad and I chose the pasta e fagioli soup. Since it's an Italian restaurant we opted for the entrees where we could try their homemade sauce. For our entrees, Dave ordered the chicken parmesan and I ordered the ravioli and meatballs, the boys each ordered spaghetti and meatballs. For dessert they served a delicious cannoli. Our meals were excellent and the portion sizes were ginormous! Every meal looked amazing and no one was going home hungry from Manzella's. As a family of 5 our total bill with tax came to $78.00. You can't eat at a chain restaurant like Applebee's for that price. I can't believe we live so close to Manzella's and never tried it there until now, yes I'm kicking myself! We will be back again and I look forward to venturing out and trying other restaurants in our neighborhood, like Marotto's. A little Calamari Break from Local Restaurant Week


As much as I love dining out during Local Restaurant Week I needed at least one home cooked meal this week. Sunday was breakfast at Spragues Maple Farm, Tuesday was dinner at Remington's Tavern, Wednesday was dinner at Oliver's and Thursday was dinner at the food court at the Niagara Factory Outlet Mall. Did you just go back and re-read if I actually stated we ate at the food court? Yes, we ate at the food court. Clearly, the food court did not participate in LRW nor would LRW ever want them to; we ate there out of mere convenience. We didn't get to the mall until 6 and I wasn't feeling all that great, so when Dave asked where I wanted to go to dinner I said "wherever you want to." He said "let's just eat at the food court." Thinking I would laugh and say no way to him, I said "that's fine." He was like "Wow, you really must not feel well." The boys were in their glory eating at the food court because they got to eat whatever they wanted to and wherever they wanted to. To them, it was like eating at the buffet on our Carnival Cruise 5 years ago. To me, it was like I'm going to feel sick for days now. Luckily I made a quick recovery….as soon as I started shopping I forgot all about my mediocre at best meal from Greek Pita Express at the food court. Plus I got this super cute Baggallini Bag for only $24.00! Total steal considering I was going to order it on-line for $85.00. I digress I know, back to our one home cooked meal this week. For dinner tonight I made a Shrimp, Tomato and Feta Bake over rice (See pic below) and for our appetizer, being highlighted in this post, I made crispy calamari with scallions, olives, sweet banana peppers, shaved parmesan cheese and fresh lemon. A lot of ingredients you say, yes there are, but let me tell you, they all work together so well! I actually make this recipe based off of the Calamari at John Harvard's Restaurant at Holiday Valley and Torro Restaurant on Elmwood. They both make it so good that one day I decided to make it at home but with my own twist. If you love calamari, you will love this recipe because it's different from the ordinary. It's one of those appetizers that you say to yourself "last bite" and then find yourself having 10 more last bites. Its very easy to make and a crowd pleaser. I made this over the holidays as an appetizer and my mother who can be very picky with her food loved it. So as much as I love dining out during LRW and look forward to our dinner at Manzella's Restaurant on Saturday night, it was a nice break having a homemade dinner at home tonight! Salute to a delicious crispy calamari break!
To save on time, use a pre battered calamari. I bought mine from Dash's in the seafood frozen section.
I also like frozen calamari from Top's.

Crispy Calamari: (Click to print recipe)

Preparation and cook time: 15 minutes

Ingredients:

  • 1 pound of pre made battered calamari (I used Northern Chef brand)
  • 1/4 cup olives, green and kalamata
  • 1/4 cup sliced sweet banana peppers
  • 1/4 cup sliced scallion/green onions
  • shaved parmesan cheese
  • 1/2 freshly squeezed lemon
Deep fry calamari, according to instructions on package, in a skillet. (I used Northern Chef brand and it required me to deep fry in a skillet for 3 minutes.) Place calamari on a paper towel to eliminate excess oil. Place calamari on a serving platter and add the olives, banana peppers, scallions, and parmesan cheese. Gently mix with a spoon. Squeeze fresh lemon juice over top and serve hot.

Local Restaurant Week Dining Adventure #2: Oliver's Restaurant

So yesterday I enjoyed dinner with my best friends from high school; Tonight Dave and I enjoyed a spectacular dinner with 10 of our very close friends. All of the girls, Christa, Ann, Tracy, Stacey, and Rachel are my absolute dearest friends, AKA my "Spa Chick Friends." Let me explain: 12 years ago, Christa sent out an email to several of her friends asking if we were interested in going to Nemacolin Woodlands Resort and Spa for a girls weekend. After looking who she sent the email to I didn't really know anyone but I figured "Eh why not, I'm 6 months pregnant and in a few short months I probably won't be able to do anything like this again, like ever!" So I immediately replied "I'm in!" Ann, Tracy, Stacey and Rachael also replied yes. So it was the 6 of us planning a 3 day spa trip and we barely knew each other. I remember getting introduced and shaking hands with most of the girls before we hopped in our cars for the 5 hour trek to the spa. I must admit, I kept saying to myself "if this is a bust, I'm going to a spa, if this is a bust I am going to a spa." Well, it was far from a bust…within 6 hours I felt like the girls and I were lifelong friends. We clicked and bonded immediately. So much so, that we decided to make our "Spa Weekend" an annual event and we never missed a year since. Talk about things on a bucket list…mine is to be spa'ing together when we are old and gray….yep granny spa'ing! Throughout the 12 years of our friendship we get together often for various occasions but twice a year we always get together for Local Restaurant Week. Actually the spring season LRW dinner is usually when we plan our summer/fall Spa Weekend. We mentioned spa weekend but got too carried away with other conversations like "what's on our bucket list" that we forgot to discuss it. Oh well girls, we'll just have to get together again soon for a spa planning session! Ok on to our fabulous dinner at Oliver's Restaurant!

Oliver's is one of those restaurants that you walk into and feel like you are stepping back in time but still feel like you are having dinner in the hippest restaurant in New York City. The restaurant is located on a busy spot on Delaware Avenue in the city. There is a small parking lot with valet parking and there are always high end cars parked out front. Dave was hoping his black Cadillac Escalade would make it to the front to be displayed but no such luck, the Jaguar and Mercedes beat him to it. The restaurant was bustling and packed with people. It was the spot to be seen. It was just the perfect venue for our group of 12. The fact that all 12 of us made it was a minor miracle in itself. It's rare with our very busy schedules for all of us to make a scheduled event together. So it was extra special that we were all there. What a blast we all had! We started out with cocktails in the bar area and waited for everyone to get there. It was a perfect time for us spa girls to quickly catch up and of course tell each other how awesome we all looked and what super cute outfits we all had on. If I want to feel good about myself, I just surround myself around my spa chicks. Once we were all there we were seated at a table with chairs on one side and banquet seating on the other. It was hard for such a large group of us to be able to all talk and hear each other so we had to make the decision do we sit boy-girl-boy-girl, or do we sit guys on one end and girls on the other? Based on the fact we see our husbands every day we quickly opted for the girls on one end set up. They immediately brought our table 3 large baskets of their warm spinach bread. Yum! We ate the 3 baskets of bread pretty quickly because they were so good and then they brought out 3 more, bonus. It was difficult for us to choose what we wanted for dinner since everything looked so amazing, plus it didn't help that us girls kept talking and that distracted us from making a prompt entree selection. Our poor waiter, we kept telling him just a few more minutes. Luckily he never seemed to mind. When we finally decided on what we were having we placed our orders and the food and drink seemed never ending. Oliver's had a spectacular menu for LRW. For $20.14 you chose a First Course and a Main Entree. They also had $30.14 and $40.14 entrees which many of us chose from. We also ordered desserts which were out of this world scrumptious! The service was top notch, the food was of the highest quality and taste, the scene was hip, and the conversation…priceless! Salute to dining out with my dearest Spa Chick Friends and hubbies and enjoying a great meal at Oliver's during Local Restaurant Week!
