There is no need for a lengthy description of this recipe. I think S'mores Brownies says it all! Roasted marshmallows, graham cracker squares, and chocolate chips all baked on a brownie. This makes for a rich decadent dessert that will make you feel like you're roasting marshmallows and making s'mores by the campfire.
If you follow my blog, you know that I'm not much of a baker. So when I do bake, it has to be easy, simple and straightforward. This recipe is super easy; so easy that the boys made most of it by themselves. So if you can bake brownies from a box and sprinkle on a few toppings, you're all set. I think Tyler and Zachary were most eager to help me make this recipe so they could lick the batter. (Yes, I let them eat batter with raw eggs just like I did when I was a kid. And I never got salmonella!)
As soon as the brownies were pulled out of the oven the boy's eyes popped out because they looked so amazing. Tyler immediately posted a picture of these S'mores Brownies on Instagram and got several likes. A big pat on the back to me! The next day at school his friends were asking how they tasted and if they tasted as good as the picture. The next time the boys have to bring in treats to school, yep you guessed it, this is what I'm making!
As amazing as they looked they also tasted amazing. The boys described it as tasting like a s'more with extra extra chocolate. I agreed. I never think the measly Hersheys square is enough when I make s'mores anyways. The more chocolate in my opinion the better. The best thing about this dessert is that it really does taste like a roasted marshmallow from a campfire. The topping has this caramelly roasted taste that is so delicious. You get the roasted taste by broiling the marshmallows for 2 minutes right at the end. You have to keep a close eye on the marshmallows while they broil otherwise they will be blackened and burnt.
You can make this recipe in a cake pan instead of a cupcake pan. I prefer making brownies in a cupcake pan for two reasons: 1) There is no cutting involved and 2) They have the corner brownie crunch all the way around! I'm a sucker for corner brownies! After you let the brownies cool, you simply pop them out with a spoon, No cutting means less mess! These S'more Brownies are delicious eaten at room temperature but are even better when they are warm. Place the brownie on a microwavable plate and nook for 30 seconds. The brownie middle gets extra rich and the marshmallow topping gets ooey-gooey. This dessert is a must served with a cold glass of milk!

Cook and preparation time: 30 minutes
Serves 12
Ingredients:
- Prepared brownie mix from a box - mix ingredients according to package
- 1 cup graham cracker cereal - like Golden Grahams
- 1/2 cup chocolate chips
- 1 cup mini marshmellows
Preheat oven to 350 degrees. Meanwhile in a bowl, mix a box of prepared brownie from a package. Spray your cupcake pan with a baking spray. Evenly pour brownie batter into cupcake pan. Bake in oven for about 15 minutes…the batter will not be firm…and take out of the oven. Place graham cracker squares into each cupcake and sprinkle chocolate chips over the top. Place back in oven and cook through. Take brownies out of the oven and turn your oven to broil. Top each brownie with marshmallows. Place on middle rack and broil the marshmallows until golden brown for about 2 minutes. I left the oven door open a crack to keep a very close eye on them. Let cool and enjoy! Nook in the microwave for 30 seconds if you prefer to eat them warm.
